Extraction Process
The garlic slices are fed into a homogenizer and homogenized at a material ratio of 1:5 (garlic:deionized water) to form a homogeneous slurry. The slurry pH is precisely adjusted to 3.6 in a reaction tank and then transferred to a constant-temperature enzymatic hydrolysis tank. The temperature is controlled at 35℃±0.5℃, and the enzymatic hydrolysis time is 60 minutes, with low-speed stirring to ensure uniform hydrolysis. Immediately after completion, the pH is adjusted to 7.00 to terminate the enzymatic hydrolysis reaction.
Separation and Purification
A vacuum filtration system is used to remove large molecular solid residues. High-speed centrifugation is then used to achieve fine solid-liquid separation, obtaining a supernatant rich in the target active ingredients. Subsequently, the supernatant enters a low-temperature rotary evaporation process, where, under controlled vacuum and low-temperature conditions, most of the water is gently removed to obtain extraction of allicin from garlic.
